Gaia Toasted Muesli


When you've got a good friend coming for breakfast, you want to make something special. When that person is a marathon runner, you want to make it healthy - (no Eggs Benedict for us tomorrow morning)! Enter Gaia Toasted Muesli. It's got all the good stuff in it to make you feel virtuous, but yummy enough to make it feel more than every-day.


With things like oats, sunflowers seeds, pumpkin seeds, nuts and coconut, it's bursting with goodness. It's sweetened with agave syrup - a great complex sugar. Nothing to feel guilty about at all!


I added dried cranberries and dried blueberries 'cause I like them and they're pretty!

Gaia Toasted Muesli

Serves 8
4 cups rolled oats
2 cups mixed raw nuts and seeds (I used, macadamia nuts, pumpkin seeds and sunflower seeds)
1 cup shredded coconut
1/2 cup macadamia oil
1/2 cup agave syrup
pinch sea salt
1 cup mixed dried fuit (see above)

Preheat oven to 190 degrees C. Line a large baking tray with baking paper.

Place the oats, nuts and seeds, coconut, macadamia oil, agave and salt in a large bowl and toss well to combine. I found using two big spoons made it easier to mix all the ingredients. Spread on the prepared baking tray and cook for about 25-30 minutes, stirring occasionally, until golden brown. Remove from the oven and allow to cool completely.

Toss the dried fruit through the oat mixture. Put it in a pretty jar and impress your friends.
