The Best Bean Dip







Yes, I know this isn't fine dining but it's sooooo good you have to make it.

This is perfect food for Friday night football.  A perfect dinner for when you've over eaten an indulgent lunch (as we have today).  Perfect for when the kids have friends over after school.  Perfect as part of a Mexican-inspired meal.  Oh it's just flippin' perfect, just don't forget the beer - (*except may be not for the after-school kids thing!)



The Best Bean Dip
from Elle's New England Kitchen

1 x 400g can refried beans
1 cup shredded cheese, I use Buffalo mozzarella
1/2 cup red salad onion, finely chopped
1/4 teaspoon smoked paprika
1/4 teaspoon chilli powder (or as hot as you like it)
200ml mild chunky Mexican salsa
1 jalapeno, finely chopped
dash of garlic powder
Chopped coriander leaves, for garnish
Tortilla strips or corn chips for dipping

Put everything except the chips into a medium saucepan. Heat until the cheese has melted and you have a lovely oozy concoction.  Sprinkle with chopped coriander leaves and serve with dipping chips and beer* (see above).
