Chocolate Peanut Butter Pretzel Bites













Please don't look at me like that... It's Friday...We've had a week of long hours, late nights, cases of tonsillitis, strength and conditioning sessions, no football and spring cleaning. Anyway, I only made half of the original recipe because I was afraid if I made the full amount, I might actually hurt myself.


NOTE: If you want to make the full amount, just double the quantities (and your dress size if you're anything like me and can't stop at one.  :)


Chocolate Peanut Butter Pretzel Bites

Makes about 12 - 14 (I made 13, go figure.)

1/2 cup smooth peanut butter
15g softened unsalted butter
1/4 cup icing sugar (may be more)
1/2 cup brown sugar (may be more)
Pretzels
100g dark chocolate chips

Line a baking tray with baking paper.

Put the peanut butter and softened butter in a bowl and mix until smooth (I used a hand-held electric mixer). Add the sugars and mix to combine. The filling needs to be able to be rolled easily into balls without sticking to your hands. If not, add a little more of each sugar until you reach a consistency that is easy to roll.

Use a teaspoon to scoop the filling out into your palms and roll each portion into a small ball, then sandwich them between two pretzels. When all the balls are rolled and sandwiched, put them on the tray and put the tray in the freezer for half an hour.

Pour the chocolate chips into a microwave safe bowl and heat at 30-second intervals, stirring occasionally until completely melted. Remove the pretzel sandwiches from the freezer and dip each half-way into the melted chocolate. Return to the tray and repeat with remaining sandwiches. When they are all dipped, return the tray to the freezer to firm up. Keep the pretzel bites in the refrigerator until it's time to serve.

  1. Oh gosh, we are so alike. Food is our comfort. I sometimes make half of a recipe for the same reason as you. I've just start running because I had a lax of motivation those last months but with the leaves falling down of the trees and the temperature, I've no excuses. Plus; it's the time for comfort food so if I wanna wear my new autuwm clothes, I've got to run haha :P Well, your bretzel seems to be a nice reward after a nice run :)

  3. These things are PERFECT! I love how you made the little ball, it looks like a candy you could get it one of those fancy little candy stores! We've been on a trail ride all weekend, and I've shown these pictures to everyone, exclaiming they are next! lol! We have a very cool day today, with not much else to do other than make Chocolate Peanut Butter Pretzel Bites.. Here I go!

  5. these look absolutely awesome! I was wondering, i wanted to make these as party favours for my bf's birthday and i need to make about 60..... do you think that's possible? or does this take a long time. your pictures are amazing by the way. they look very professional and inventive

  6. Hey there Anon. Thanks for your comment. These are super easy. You should be able to make 60 of these in no-time-flat. Just keep doubling the recipe until you've got enough. PS: Make sure you make a few extra - for the cook to taste-test ;-)

    I want to make these to give as Christmas presents. How far in advance do you think I could make them? I'm wondering if the pretzels would absorb moisture/oil from the peanut butter and go soggy if made too far in advance. Any experience with this?

  8. Thanks so much for your comment Mrs. Hutch. These are perfect for a Christmas gift. I have kept them in the refrigerator for about 3 days without them showing any signs of age. They were still as delicious and crisp as they were when they were first made. I don't have any experience with keeping them any longer than that... they don't really last very long in my house :) I'm guessing our (Australian) peanut butter is the same as yours, assuming you're not Australian. The oil content may vary in different peanut butters and that could, in turn, vary the shelf-life of the pretzel bites. I guess it goes without saying, that the closer you make them to the time they will be eaten, the better. Hope this helps.
