Oreo and Peanut Butter Brownie Cakes

I made these for the kids... And if you believe that, you'll believe anything.

Oreo and Peanut Butter Brownie Cakes
Brownie Cakes from Picky Palate, Brownie Batter from Dorie Greenspan's Baking: From My Home to Yours
Makes 7

For the Brownie Batter:
1/4 cup plus 2 tablespoons plain flour
pinch of salt
55g unsalted butter
70g dark chocolate, coarsely chopped
1/3 cup packed light brown sugar
1/2 teaspoon vanilla extract
1 large egg

For the Cookie Stacks:
1 packet of classic Oreo Cookies (14 cookies)
1/4 cup smooth peanut butter

Preheat oven to 180 degrees C. Line 7 muffin pan holes with paper liners. Put a teaspoon of water into the empty muffin pan holes.

Make the Brownie Batter:
Whisk together the flour and salt. Set aside.

In a small saucepan over low heat, melt butter, chocolate, and brown sugar. Stir frequently to avoid overheating or burning. Remove from heat when mixture is smooth. Allow to cool for 1-2 minutes.

Stir in vanilla and egg until well-blended. Add flour and stir just until incorporated. Batter should be smooth and glossy.

Make the Brownie Stacks:
Spread 1 teaspoon of peanut butter on top of 7 Oreo cookies then sandwich them with the other Oreo 7 Oreo cookies, you'll have 7 stacks in total. Spread another teaspoon of peanut butter on top of each stack. Put a stack in each paper liner.

Put it all together and bake:
Spoon 2 tablespoons of brownie batter over each Oreo stack and let it run down the sides of the cookies. Bake the brownie cakes for 18 to 20 minutes, until brownies are cooked through. Let cool completely then serve.

  1. oh stop. these look dangerous!! YUM!

  2. Hmm well, what I should believe hun....hmmm....well. I always make bread and sweets for my family. Why would I do that for me? ;)

It is seriously some devilish cake. Peanut butter with Oreo...who could think of that haha :P

  3. That's right Gabrielle,, we ALWAYS bake with others in mind, right? ;P

  4. Thanks Coco. It's a very drool-worthy recipe ;)

  5. This is every adults childhood memory wrapped in one neat package of goodness. How do you stay so slim?

  6. Thanks Patty. These are a "neat" little package aren't they? "Decadent" and "Over-the=Top" are words that come to mind too :) And on the slim question, I think we can all assume that's more about good luck than good management :0

  7. My husband could probably take down a whole dozen of these in one sitting =)

  8. HeHe Peggy G., there's a reason why I only made seven ;P

  9. Trying this recipe right now! I am scared that I didn't make my brownie batter thick enough!!!!

  10. Hey Anon. Don't stress. If you followed the recipe you should be okay. Remember, nobody likes a dry brownie. I'd love to know how it turned out.

  11. I just skipped breakfast and ran out to the shops to get the stuff for this. I think you've created a monster ;)
