S'more Brownies



                               



ROGUE MARSHMALLOWS - up there... in the corner.. arghhhh.













I love brownies. I love eating brownies. I love sharing brownies. I love making brownies. I love it when I have everything looking picture perfect in the finished dish. I love it when I have enough marshmallows of the same size to top my S'more Brownies. But on this occasion, I was short about 6 normal-size marshmallows to complete the topping. I had to use large marshmallows to finish, which messed up my symmetry and, in turn, triggered my OCD. I had to eat the brownies with the rogue marshmallows on top so that I didn't have to look at them any more... and I still love brownies.



S'more Brownies
Makes 12

For the Base:
90g unsalted butter, melted
1 1/2 cups crushed Digestive Biscuits
2 tablespoons brown sugar
Pinch fine salt

For the Brownie:
100g unsalted butter
100g dark chocolate, chopped
1 cup packed light brown sugar
3/4 cup caster sugar
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon fine salt
4 large cold eggs
1 cup plain flour

For the Topping:
Two packets of marshmallows - don't get me started.

Position a rack in the lower third of the oven and heat oven to 160 degrees C. Line an 20cm square baking pan with foil so it hangs over the edges by about 2cms.

Make the Base:
Lightly butter the foil with some of the melted butter. Stir the rest of the butter together with the biscuit crumbs, sugar, and salt in a medium bowl. Press the crumb mixture evenly over the bottom of the pan. Bake until golden brown, about 20 minutes.

Make the Brownie:
Put the butter and chocolate in a medium microwave safe bowl. Melt in the microwave on 75 percent power for 2 minutes. Stir, and microwave again until completely melted, about 2 minutes more. Stir the light brown and white sugars, vanilla and salt into the melted chocolate. Add the eggs and beat vigorously to make a thick and glossy batter. Add the flour and stir until just incorporated.

Pour batter into the prepared pan. Bake until the top is crispy and a toothpick inserted into the middle comes out mostly clean, with a few crumbs, about 40 to 45 minutes.

Remove from the oven and carefully position a rack about 15cms from the grill (broiler) and preheat on low. Layer marshmallows across the top of the cooked brownie layer and toast under the grill until golden, (keep an eye on it, it can brown quickly), about 2 minutes. Cool on a rack, gently removing the brownies from the pan using the foil flaps. Carefully separate any marshmallow from the foil and fold away. Cut into 12 squares.

    I usually don't like marshmallows but when the boss brought these into work I had to try one. And I'm so glad that I did! They are absolutely delicious!

    I feel famous when I eat something that you've cooked and then you blog about it! hehe

    I'm really glad you liked the brownies. I totally agree with you about the marshmallow thing. On their own, I think "what's the point?" But when they are toasted and all melty and accompanied by obscene amounts of chocolate, they are pretty dreamy.

  7. These look SO good! I love brownies too, especially really rich, fudgy ones, and of course ones topped with toasted marshmallows. Toasted marshmallows are the best kind. :)
    And I totally understand your even-sized marshmallow OCD; I would be the same way!
