I don't know much about a lot of things, but one thing I Do know, is that I won't be satisfied until I've experienced all things S'mores.
S'mores Pie
adapted from In the Kitchen
For the Base:
12 digestive biscuits, (enough to make 1 cup when crushed)
40g unsalted butter, melted
1/2 teaspoon cinnamon
For the Filling:
170ml milk
170ml cream
280g dark chocolate, chopped
2 eggs, lightly beaten
1 teaspoon pure vanilla extract
Pinch of salt
For the Topping:
White marshmallows
Make the Base:
Preheat the oven to 160 degrees C. Line the base of a 22-23cm pie dish with baking paper.
Blitz the biscuits in a food processor until you have a fine, even crumb. Put the crushed biscuits into a bowl and add the cinnamon and sugar. Mix to combine. Press the biscuit mixture into the base of the prepared pie dish. Bake in the oven for 10 minutes.
Make the Filling:
Pour the milk and cream into a saucepan. Add the chocolate and vanilla and stir until the chocolate has melted. Remove from the heat and gradually whisk in the beaten eggs.
Make the Pie:
Pour the filling into the pie dish and bake for 20 minutes or until the filling has set and the centre of the pie doesn't wobble when gently shaken.
While the pies is still hot, evenly place the marshmallows over the top of the pie. Use a
