Almond Butter Hummus





 





What do you serve kids as an afternoon-movie-watching treat, that's healthy and isn't popcorn? Almond Butter Hummus, that's what.



Almond Butter Hummus
adapted from Nigella Lawson's Kitchen
Serves 4

1 x 400g can chickpeas, rinsed and drained
1 clove garlic
2 tabelspoons olive oil
3 tablespoons almond butter
2 tablespoons lemon juice, plus extra if needed
1 teaspoons sea salt flakes
1 teaspoons ground cumin
2 tablespoons low fat Greek yoghurt
1 tablespoons natural almonds, finely chopped, for garnish
1/2 teaspoon smoked paprika, for garnish

Put the chickpeas, garlic, 1 tablespoon oil, almond butter, lemon juice, salt and cumin into a food processor (I used a stick mixer) and blitz to a puree. Add a little water if it is difficult to blend.

Add the Greek yoghurt and process again. If the hummus is still very thick, add another tablespoon yoghurt and the same of oil.

Taste for seasoning, adding more lemon juice and salt if you feel it needs it.

Mix the chopped almonds with the paprika and sprinkle on top. 

I served toasted Mountain Bread, celery sticks and carrot batons for dipping and dunking.

    This is a little variation on traditional hummus where tahini is usually used.
