Almond Butter Hummus

What do you serve kids as an afternoon-movie-watching treat, that's healthy and isn't popcorn? Almond Butter Hummus, that's what.

Almond Butter Hummus
adapted from Nigella Lawson's Kitchen
Serves 4

1 x 400g can chickpeas, rinsed and drained
1 clove garlic
2 tabelspoons olive oil
3 tablespoons almond butter
2 tablespoons lemon juice, plus extra if needed
1 teaspoons sea salt flakes
1 teaspoons ground cumin
2 tablespoons low fat Greek yoghurt
1 tablespoons natural almonds, finely chopped, for garnish
1/2 teaspoon smoked paprika, for garnish

Put the chickpeas, garlic, 1 tablespoon oil, almond butter, lemon juice, salt and cumin into a food processor (I used a stick mixer) and blitz to a puree. Add a little water if it is difficult to blend.

Add the Greek yoghurt and process again. If the hummus is still very thick, add another tablespoon yoghurt and the same of oil.

Taste for seasoning, adding more lemon juice and salt if you feel it needs it.

Mix the chopped almonds with the paprika and sprinkle on top.

I served toasted Mountain Bread, celery sticks and carrot batons for dipping and dunking.

  1. Stopped by to wish you a Happy Mother's Day.

  2. Thanks Sara. I love the photography as much as the cooking - and almost as much as the eating!

  3. Thank you Patty. I've been spoiled by my gang. Presents, breakfast in bed, movies, time to myself... they are the best little guys in the world. Hope you're having a great Mother's Day too. x

  4. Happy Mother's Day! Hope you had a lovely relaxing one! I've never had hummus with almond butter! It looks lush and lovely.

  5. Thank you Maria. I was pampered and fussed over all day. Hope you had a lovely day with your family.

This is a little variation on traditional hummus where tahini is usually used.

  6. This looks so good, will be making this very soon, I make a similiar one in my Thermomix, but sounds delicous with the almond butter !
Thanks again with another beautiful recipe x

  7. Hope you have a fantastic Mother's Day!

  8. Thanks Shez. This will whip up beautifully in the Thermomix.

  9. Thanks Little Kitchie. Breakfast in bed with my two boys, talking at me a million miles an hour and spilling crumbs - haha.

  10. Sounds like a sweet day :)

Lovely looking hummus, so creamy and rich looking.
