Turkey and Zucchini Burgers with Yoghurt Sumac Sauce







I'm thoroughly enthralled in the new (to me) series of Mad Men. Dan and Megan are fighting more than ever, Pete is more lost than ever, Peggy is more successful than ever and there's more drinking and lying around on sofas than ever. I'm so in to it, I don't know how I'm ever going to get anything done... ever.  Though I did take a short break from the visual feast to make my own actual feast, these tasty burgers. Then it was straight back to lie down on my own sofa to see what my BBF Joan, and her colleagues were getting up to.

NOTE: I originally published this post on 9th May, 2013 (during my Mad Men phase, obviously), but it desperately needed new photos, so here they are.




Turkey and Zucchini Burgers with Yoghurt Sumac Sauce

Makes 4


For the Burgers:
500g turkey breast fillets, ground (or buy ready ground turkey)
200g grated zucchini
6 spring onions. sliced finely
1 egg
2 tablespoons chopped mint
2 tablespoons chopped coriander
2 garlic cloves, crushed
1 teaspoon ground cumin
1 teaspoon fine salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon smoked paprika
about 100ml sunflower oil (for frying)

For the Sauce:
100g light sour cream
150g low fat Greek yoghurt
1 teaspoon grated lemon zest
1 tablespoon lemon juice
1 clove garlic, crushed
1 1/2 tablespoon extra virgin olive oil
1 tablespoon sumac
1/2 teaspoon sea salt flakes
1/2 teaspoon freshly ground black pepper

Make the Sauce:
Put all the ingredients into a bowl and stir.

Make the Burgers: 
Preheat the oven to 220 degrees C. Line a baking tray with baking paper.

Mix all the burger ingredients, other than the oil, in large bowl. Shape into four large patties.

Pour the oil into a large frying pan and heat on medium-high. Cook the burgers for about 4 minutes on both sides so that they are deep golden.

Transfer the burgers on to the prepared baking tray and bake in the oven for abut 5 minutes, or until just cooked through.

Serve warm or at room temperature on toasted burger buns with some lettuce leaves and the sauce spooned over.

  2. Very impressed that you grind your own meat! That is a beautiful burger. I don't have that cookbook. Yet. Seriously want though. Adore Mad Men too. I think it's responsible for my uptick in martini consumption for sure.

  5. Hey Pink Patisserie. I grind the meat myself so that I know exactly what cut I'm getting, how much fat is in it and so that it is freshly ground just before I use it. It is really quick and easy to do if you have the equipment. I think you would love this book Maria.

    Every time I watch Mad Men I want to wear vintage dresses and drink Vodka Gimlets.
