This is me thumbing my nose at winter.
Watermelon and Avocado Salad
slightly adapted from Simple Pleasures
Serves 4
Half a large seedless watermelon, cut into bite-size chunks
2 ripe but firm avocados, sliced
200g fresh mozzarella, torn into bite-size pieces
Juice and finely grated zest of two limes
1 jalapeno, finely chopped
Sea salt flakes and freshly ground black pepper
Handful of basil leaves, torn
Lime halves, for spritzing
Put the watermelon chunks, avocado slices and torn mozzarella into a large salad bowl and toss gently to mix. Sprinkle the lime juice and zest over, along with the chilli and season with salt and pepper. Turn everything over again to mix and then strew with torn basil leaves and some lime halves.
I like how you thumb your nose. Winter needs to be put in it's place every now and again. :) This salad would definitely do it. Love those flavors, but never had them together!
