Express Chocolate Mousse












You know those days when you get home from work and the cookie jar is empty, the cake plate has been licked clean and there's a very guilty looking ice cream scoop in the sink and the thought of not having something sweet to end the day makes you want to cry? Express Chocolate Mousse to the rescue.



Express Chocolate Mousse
slightly adapted from Nigella Lawson's Nigella Express
Makes 6

150g mini white marshmallows (or large marshmallows, chopped)
50g unsalted butter, room temperature
250g dark chocolate
60ml hot water
1 teaspoon instant coffee powder
300ml cream

Put the marshmallows, butter, chocolate, water and coffee powder into a heat-proof bowl. Set the bowl over simmering water, stirring occasionally, until you have a smooth homogeneous mixture. Set aside to cool.

Whip the cream until thick, and then fold it into cooling chocolate mixture.

Pour the mixture into small ramekins and chill. They are pretty much ready to be eaten straight away.

  3. love the pictures, really great! brown versus white... gets all the attention just to the luscious brown looks gorgeous!

    would love to try it out, only issue being am vegetarian, and marshmellows aren't!! or the ones available in india aren't:) but when they are, will definitely make this. am a sucker for chocolate mousse!

    1. It's too bad you can't get vegetarian marshmallows where you are. You could make your own vegetarian marshmallows. I found this link and the process looks pretty easy as long as you can get your hands on some agar agar. Then you could make this mousse and so many other (s'mores), things that contain marshmallows.
