S'mores Ice Cream

















I was at the gym this morning eavesdropping and I overheard a personal trainer talking to a client. This is what I heard:
"Now, you've worked really hard today, so make sure you drink plenty of water. Sometimes when we're dehydrated we feel hungry instead of thirsty, so remember to drink water. When we're dehydrated we tend to crave, so drink lots of water. You'll probably start feeling pretty tired later today and that's when you should take lots of sips of water because tiredness can be a sign of dehydration."

I kept waiting for her to say: "You've worked really hard today and you're going to be hungry and tired, so go home and eat some ice cream and take a nap." I waited, but she didn't say it.



S'mores Ice Cream
slightly adpated from Betty Crocker

6 egg yolks
3/4 cup caster sugar
1/4 cup packed light brown sugar
1 teaspoon vanilla paste
2 cups milk
2 cups whipping cream
1/2 cup cocoa powder
2/3 cup Marshmallow Fluff
1/4 cup Digestive biscuits (or graham crackers), roughly broken up
1/4 cup dark chocolate chips
Hershey's chocolate to serve (optional)

In the bowl of an electric mixer fitted with the whisk attachment, whisk the egg yolks with the sugars on medium speed until smooth and creamy. Add the vanilla paste and whisk to combine.

In a 2 litre saucepan, heat the milk, cream and cocoa until bubbles start to appear at the edges. Do not boil. Remove from heat.

Add 1/4 cup of the hot milk mixture to the egg mixture and beat until combined. Add another 1/4 cup of hot milk to the eggs and beat again. Continue until all of the milk mixture has been incorporated into the egg mixture.

Pour all of the mixture back into the pan and cook over medium heat until the mixture reaches 86 degrees on a sugar thermometer. Pour the mixture through a fine sieve into a clean large bowl and leave to cool.

Chill the mixture in the refrigerator for at least 4 hours to get completely cold.

Pour the mixture into an ice cream machine. Mix for about 15 minutes, until it starts to become thick. Add the marshmallow Fluff one tablespoon at a time while the machine is churning. Sprinkle in the Digestives and chocolate chips. Continue churning for another 5 minutes. Pour the ice cream into a freezer-safe tub and put it in the freezer to firm up. Serve in small bowls and top with bite-size portions of Hershey's chocolate, or between to Digestives to make an ice cream sandwich... or stand at the kitchen sink and spoon it directly out of the tub and into your mouth.

  1. I don't go to a gym, don't have a personal trainer but the little voice in my head is always telling me a bit of something sweet is just fine and that I deserve it!

  2. I love your story at the gym! Trainers sometimes don't know what's best for us, they don't understand. But I think just like you, ice cream is good after a workout :) Love smores, so I'm sure I would love this ice cream :)

  3. Haha! Love it! I doubt you'll ever hear those words come from any trainers mouth. Water vs. this amazing ice cream, um I definitely know which one I'm choosing!

  4. I was pretty excited the other day when I found marshmallow fluff for sale in my local supermarket (before then, I'd never seen it in the UK) but I forgot to buy it! I'll have to track it down again. And I don't go to the gym but if I did, it would be so I could eat twice as much of this ice cream!

  6. Oh my GOSH. This is heaven on a plate (in a tin, in a tupperware container... wherever, whenever, hot or cold weather!). So glad that you can source the Hersheys and marshmallow fluff near you. I have to get it mailed here or I can buy it from select international food stores for premium (ahem... extortionately expensive) prices. I'd do it for this recipe though. DIVINE, Jen.

    1. Thanks Laura. I've seen recipes where they toast marshmallows and blitz them in a food processor and add them to the ice cream. I haven't tried it, but it might me a way for you to make this with the fluff. We need to lobby your local supermarket and tell them to get they lazy-asses into gear.
