I've been seriously up against it today. I hope these Kiss Cookies pass muster?
Kiss Cookies
adapted from Erica's Sweet Tooth
Makes 24
3/4 cup peanut butter
115g unsalted butter
1/3 cup caster sugar
1/3 cup light brown sugar
1 egg
3 tablespoons milk
1 teaspoons vanilla extract
1 1/2 cups cake flour
1/2 teaspoon baking soda
1/2 teaspoon salt
24 Hershey's Caramel Kisses
Preheat the oven to 180 degrees C.
Put the peanut butter and butter in the bowl of an electric mixer fitted with the paddle attachment and beatthe living daylights out of it until light and fluffy.
Add both the sugars, egg, milk and vanilla and beat itlike a rug after winter thoroughly.
In a separate bowl, whisk together the flour, baking soda and salt and, with the mixer on low, gradually add it to the peanut butter mixture.
Shape the dough into 2cm balls (I used a mini ice cream scoop) and press them into 2 x 12 ungreased mini-muffin tins.
Bake for 8 minutes. Remove the tins from the oven and immediately press a Caramel Kiss firmly into the centre of each cookie.
Leave the cookies in the tin for 5 minutes before transferring them to a wire rack to t cool.

I used to make these all the time with my mom when I was little... you're making me nostalgic AND hungry!
