Christmas Rocky Road











 





I know making Rocky Road doesn't take an awful lot of skill, but when you need a treat and it's 40 degrees outside, to heck with skill.



Christmas Rocky Road
from Donna Hay

1kg dark chocolate, chopped
2 tablespoons grape seed oil
130g dried cranberries
200g white marshmallows
250 Turkish delight
50g coconut flakes
140g unsalted pistachios, chopped

Spray a 25 x 32cm baking tray with cooking oil spray and line it with baking paper.


Put the chocolate and oil into a heat-proof bowl, suspended over a pan of simmering water. Don't let the bowl touch the water. Stir until the chocolate is completely melted and smooth. Remove from the heat.

Combine the rest of the ingredients in a large bowl. Reserve a cup of the melted chocolate and the remaining chocolate to the rocky road mixture. Stir to coat the fruit and marshmallows etc. with the chocolate. Pour the mixture into the prepared baking tray. Pat it down gently to make it as even as possible, then pour the reserved chocolate over the rocky road and spread it evenly, give it a little side-to-side shake to make sure it settle into the crevices. Chill for 30 minutes before slicing.

  5. Oh my goodness. Rocky road with turkish delight!!! I'm giddy about that and need to get my hands on some so I can make this! Do you think I can call it New Year's Rocky Road? :)

    1. Turkish delight in rocky road is a revelation. I may never make rocky road without it again... And for New Year, sprinkle it with some edible golden glitter and no one will be the wiser... It'll be our little secret. *wink*
