Granola Dust

This is a recipe from Jamie Oliver's new book Everyday Super Food.  It's easy, healthy and delicious. All you do is lightly toast some oats, nuts and seeds until they smell gorgeous.  Chuck in some lovely dried fruit, cocoa and coffee.  Bung it all in a processor, smash it to bits and you've got breakfast sorted for days.  I've read the book from cover to cover.  I think I'm starting to sound like him.

Granola Dust
slightly adapted from here
Makes 16 portions

For the Granola Dust:
500g traditional porridge oats
125g mixed nuts (I used hazelnuts, cashews, Brazil nuts, natural almonds, macadamias, pecans and pistachios)
50g mixed seeds (I used pumpkin seeds, sunflower seeds, flax seeds, white chia and sesame seeds)
125g mixed dried fruit (I used mango, blueberries, currants, apricots and cranberries)
1 1/2 tablespoons cocoa powder
1/2 tablespoon fresh, finely ground coffee beans
Zest of 1 orange

To Serve:
Greek yoghurt
Honey (I used chestnut honey)
Fruit (I used fresh strawberries and blueberries)

Preheat the oven to 180C.

Mix the  oats, nuts and seeds together in a bowl, then spread them out on a large baking tray.  Toast in the oven for about 20 minutes, stirring once.  Take the tray out of the oven and add the dried fruit, cocoa powder, ground coffee and the orange zest.

Blitz the mixture in batches in a food processor until finely ground.  Keep in an airtight container.

Measure out 50g of granola dust per person.  Serve with yoghurt, honey and fruit.

  1. That's really interesting to turn the granola into dust. It's different and I'm sure it is as good. Love the use of coffee and the orange zest. Loooove it :)

  2. This is exactly my kind of breakfast food! I'm going to replace the oats with buckwheat and make a big ole jar for healthy breakfasts on the go. Totally pukka (as JO would say...)

  4. Im looking for a healthier cereal for the kids and came across this, does it really not taste of coffee?

    1. Hi and thanks for visiting. There's coffee in it, so there's a hint of coffee in the flavour, but I wouldn't say it tastes of coffee. The main flavours are chocolate and orange. My kids happily eat this, but you can always leave the coffee out if you prefer.

  6. Just made this and had it for breakfast. Really delicious, lots of flavour. I substituted cocoa for cacao as I didn't have any cocoa. Definitely a new regular recipe in my household.

    1. Hi Jody. Thanks for the feedback. I made it again the other day and did exactly the same thing; replaced cocoa for cacao - just as delicious. So glad you enjoyed it.

  7. One question with the dried fruit doesn't it get real chunk/stick together? dried fruit is not a dry ingredient. Not sure how it turns into dust. Can somebody comment on that please?

    1. It turns into dust, trust me. The ratio of fruit to dry ingredients nullifies the fruits stickiness.

  8. I didn't use any fruit in mine, I drizzled honey in until it was *just* sweet. Also, it really helps if you grind the coffee very fine (or use 'espresso' grind coffee) Love this stuff!
