Sour Pear Salad







If you're looking for a salad to go with Asian food, look no further. If you've just roasted a chicken and have no idea what to put with it, here's your answer. The roasted pork belly you've just taken out of the oven needs a bright, well-dressed partner at the dinner table, hello!


Sour Pear Salad
from Valli Little's Delicious: Simply the Best
Serves 4

1 tablespoon peanut oil
1/3 cup lime juice
1 garlic clove, crushed
1 small red chilli, seeds removed, finely chopped
1 tablespoon palm sugar
1 tablespoon fish sauce
1 tablespoon light soy sauce
2 tablespoons toasted chopped macadamias
1/2 red onion, thinly sliced
2 cups mixed salad leaves
1 cup of mixed herbs (such as Thai basil, coriander & mint)
3 slightly under-ripe pears, cut into wedges

Combine the oil, lime juice, garlic, chilli, sugar, fish sauce and soy sauce in a bowl, stirring to dissolve the sugar. Place the macadamias, red onions, salad leaves, herbs and pears in a bowl. Drizzle over the dressing and toss to combine.
