Lavender and Orange Broccoli with Cous Cous







Sometimes I get a mad craving for broccoli. Why can't I be like every other woman person and just crave chocolate? May be it's a "n...n...need iron" thing or may be I'm just weird. Any way, if you are nusto like me, here's a broccoli salad that'll satisfy that craving and give you an almighty iron-rush.


Lavender and Orange Broccoli with Cous Cous
from Simon Bryant's Vegies
Serves 4

200g cous cous
180ml boiling water
100ml extra virgin olive oil
salt flakes and cracked black pepper
1 head of broccoli, shaved with a vegetable peeler
juice of 2 oranges
finely grated zest of 1 orange
1 teaspoon dried lavender flowers
2 tablespoons finely chopped thyme
1/4 bunch parsley leaves, finely chopped
4 sprigs tarragon leaves, finely chopped
1 tablespoons red wine vinegar or balsamic vinegar

Place the cous cous in a bowl. Mix the boiling water with a tablespoon of olive oil and 1 teaspoon of salt flakes and pour over the cous cous. Fork through, then cover with plastic film. Leave to stand for 5 mintes, then remove the film and run a fork through the cous cous again to separate to grains.

Place the broccoli, orange juice and zest, lavender, thyme, parsley, tarragon, vinegar, remaining oil and salt and pepper to taste in a large bowl and mix well.

Divide the cous cous between four serving plates and top with the broccoli salad.
