This was originally going to be PB & J Bread and Butter Pudding and if you want to keep with the original theme, just replace the Nutella with jam. Or you could do all three and make PB, N & J Bread and Butter Pudding, but you didn't hear it from me.
PB & N (for Nutella) Bread and Butter Pudding
slightly adapted from Donna Hay
Serves 4
1/4 cup peanut butter
1/4 cup Nutella
8 thick slices white bread
Unsalted butter, softened, for spreading
1 cup cream
1/3 cup milk
2 eggs
1 egg yolk, extra
1/4 cup caster sugar
1 teaspoon vanilla bean paste
Rapadura or Demerara sugar, for sprinkling
Crushed peanuts, for sprinkling
Preheat oven to 160 degrees C.
Spread the peanut butter on one side of 2 slices of bread, sprinkle with crushed peanuts (or use crunchy peanut butter) and sandwich with another two slices of bread. Spread another 2 slices of bread with Nutella and sandwich them together with the remaining 2 slices of bread. Trim the crusts off and butter the outsides all the sandwiches. Cut each sandwich into 4.
Arrange the little sandwiches in a 2/12 cup capacity (625ml) ovenproof dish.
Pour the cream, milk, eggs, egg yolk, sugar and vanilla paste into a small bowl or jug, and whisk to combine. Gently pour the cream mixture over the sandwiches and let it sit for about 2 minutes. This will allow the bread to soak up some of the custard.
Sprinkle with Rapadura or Demerara sugar and crushed peanuts. Place the dish in a large roasting pan. Pour in enough boiling water to come halfway up the sides of the ovenproof dish.
Bake for 40-50 minutes or until just set. Remove from the oven and allow to stand for 10 minutes before serving.
Serve with softly whipped cream or vanilla ice cream.

- I have a rather unhealthy addiction to HBO.
- I thought I put my phone through the wash with the rest of the laundry this morning, but just found it in my underwear drawer?
- I run every day, not because I like running, but because I LOVE dessert.
- Often,when I'm writing my blog, I'm also refreshing Twitter (I believe it's called procrastination.)
- I drink more tea than coffee. (I know that's hard to believe.)
- I read... a lot. Usually when I'm meant to be doing something else.
- I have a special talent, it's called Internet Food Shopping.
- I love wearing soft, lightweight knits (but only when it's below 20 degrees C - What can I say, I'm a contradiction).

ReplyDeleteThis looks goooood! I was just thinking back to grade 6 when my friend and I used to make these sandwiches with peanut butter on one slice of bread and Nutella on the other and then we'd microwave them for 20 seconds before sticking the slices together :P
