I love all greens... except celery. (It's a horror story. You don't want to know about it.) But it wasn't always that way. When I was a kid, I caused many tense moments at the dinner table as I refused to eat my greens... sorry mum and dad. But now, I really adore all greens... and broccoli would have to be one of my favourites... and this would have to be one of my favourite ways to eat broccoli. Green Goodness - give it to me. (I think my eight-year-old-self would slap me right now.)

Serves 4
For the Slaw:
2 head of broccoli, trimmed and chopped into large pieces
1/2 cup sliced natural; almonds, toasted
1/2 cup dried sour cherries
1/2 red onion, finely chopped
For the Buttermilk Dressing:
1/2 cup buttermilk
1/3 cup low fat Greek yoghurt
2 tablespoons apple cider vinegar
1 tablespoon sugar
Make the Slaw:
Fix the slicer blade to a food processor and slice the broccoli. Or slice very finely by hand.
Put the broccoli, almonds, sour cherries and red onion into a large salad bowl.
Make the Buttermilk Dressing:
Whisk all the ingredients together in a small bowl, seasoning well with salt and pepper.
Pour the dressing over the slaw and toss.
I love broccoli too (and celery is the only green I don't like):) Must try this!
ReplyDeleteA market by my house makes a salad just like this, and I pick up containers of it for quick lunches ALL the time. Going to try homemade now, though!
ReplyDeleteTried this as soon as I got the smitten kitchen cookbook and it is now one of my favourite salads. It's really good.
ReplyDeleteI simply love, love, love this salad. And the only way my parents would ever get me to eat anything green involved copious amounts of cheese sauce. But it worked! I think I'm still trying to work off the cheese sauce tho, so maybe not so much.. :) Beautiful photos Jennifer.

ReplyDeleteHehe Pink Patisserie - I think it's an adults right of passage to have to raise a child who won't eat their greens. Cheese sauce makes everything better - I'm still using it as a vehicle for the veggies.
ReplyDeleteThanks Shez. You'll love this if you love raw broccoli. I eat vats of the stuff. The dressing is a winner. You can use it to dress warm potatoes or over a green salad.
