How to win friends and influence cookie monsters.
Peanut Butter Choc-Chunk Cookies
slightly adapted from Bill Granger's Every Day
Makes 18
150g light brown sugar
30g unsalted butter
60g crunchy peanut butter
1 egg
1 teaspoon vanilla extract
150g plain flour
1 teaspoon baking powder
100g dark chocolate, roughly chopped
Preheat the oven to 190 degrees C and line 2 baking sheets with baking paper.
In the bowl of an electric mixer fitted with the paddle attachment, beat the butter, peanut butter and sugar. Add the egg and vanilla and beat until pale and creamy. Sift the flour and baking powder together and fold them into the butter mixture. Stir in the chocolate. It will come together as a soft dough.
Take heaped tablespoons of dough and roll into balls. Put them on the baking trays and flatten them slightly. Leave enough room between the cookies for them to spread. Bake for 10 - 12 minutes, until golden brown at the edges. Leave to cool on the trays for 10 minutes, then transfer them to a wire rack to cool completely.
