Banana Nutella Muffins
adapted from Tasty Kitchen
Makes 12
200g cake flour
115g unsalted butter
115g golden caster sugar
2 eggs
1/2 cup buttermilk
2 teaspoons baking powder
2 teaspoons vanilla extract
1/4 teaspoon fine sea salt
12 teaspoons Nutella
2 mashed bananas
Preheat the oven to 180 degrees C and line a 12-hole muffin pan with paper liners.
Sift the flour, baking power and salt together in a bowl. Set aside.
In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar together until pale and creamy. Add the eggs one at a time. Add the vanilla. With the speed turned to low, add the dry ingredients. Mix to incorporate and then add the banana. Do not over mix.
Divide the batter among the prepared cups and place a teaspoon of Nutella on top of each one. take a skewer and swirl the Nutella into the batter a little.
Bake for 18 - 20 minutes.
Yum yum! Love banana and Nutella together. Definitely worth getting out of bed for!

DeleteAh, I definitely think these muffins far outweigh the benefits of hot tea in bed... maybe make them clean the house whilst you drink your tea?? Then POSSIBLY they'd deserve the awesomeness that is Jen's Banana Nutella muffins. That blob of pure chocolate hazelnut goodness on the top makes me go all gooey-brained... aaaah, Nutella...
