Chocolate Chocolate Chip Muffins
slightly adapted from Nigella Lawson's Feast
Makes 12
250g cake flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 cup cocoa powder
175g caster sugar
250g dark chocolate chips
250ml buttermilk
90ml sunflower oil
1 egg
1 teaspoon vanilla extract
Preheat the oven to 200 degrees C. Line a muffin pan with paper liners.
Put the flour, baking powder, baking soda, cocoa powder, sugar and 3/4 of the chocolate chips in a bowl and mix together thoroughly. Set aside.
In a separate bowl, whisk the buttermilk, oil, egg and vanilla together until combined.
Pour the wet ingredients into the dry ingredients and stir to combine. Do not over mix.
Divide the batter evenly among the paper liners and then sprinkle the tops of the batter with the remaining chocolate chips.
Bake for 20 minutes until the muffins have risen and are springy.
These look amazing! I haven't had decent muffins waaaay to long. So I take it that I have to stop mixing as soon as all the ingredients have just combined? Am I the only one who mixes a bit too long just to make sure?
ReplyDeleteThanks Chris. Yes, stop mixing as soon as possible, even if there's still a few lumps in the batter. Once you introduce liquid to the flour you activate the gluten and the more you stir, the more you work the gluten and, hence, the tougher your muffins will be. Stop before you think it's really mixed enough, almost under-mixed... not that I want to be a Tough Muffin about it though.
