I'm sure there are people who wake up in the morning, look outside and think "Should I wear my groovy olive green pea coat, or go with my classic grey single-breasted jacket?"... "Should I walk or drive?"... "Should I wear my hair up or down?" I look out the window and think "Should I bake cookies or brownies?" - Such is life.



Baci Kisses
slightly adapted from Valli Little's Home Cooking
Makes 20 sandwich cookies

40g unsalted butter, room temperature
1 egg
400g jar of Nutella
185g self-raising flour, sifted
Pinch fine sea salt
Cocoa powder, for dusting

Preheat the oven to 180 C. Line two large baking sheets with baking paper. Set aside.

Put the butter, egg and 235g of the Nutella into the bowl of an electric mixer and beat until smooth and creamy, about 2 minutes. Gradually add the flour and salt, continuously beating until the mixture forms a soft, sticky dough.

Roll small balls of dough, about a heaped teaspoons worth, and place the balls onto the prepared baking trays, leaving a some room for the cookies to spread a little while they bake, about 2cm between each.

Bake for 8 - 10 minutes, until the cookies are firm to the touch. Transfer them to a wire rack to cool completely.

Spread the remaining Nutella on 20 of the cookies, then sandwich them with the remaining 20 cookies. Dust with cocoa.
