M&M Cookies with White Chocolate Chunks












My kids are home from school today due to report writing. Can you tell?




M&M Cookies with White Chocolate Chunks
slightly adapted from Janelle Bloom's Family Food & Weekend Feasts
Makes 36

125g unsalted butter, softened
1 1/4 cup brown sugar
1 egg
1/4 cup cocoa powder
1/4 cup self raising flour
1 cup plain flour
1 teaspoon baking soda
200g white chocolate, cut into chunks
Assorted M&Ms

Preheat the oven to 170C fan-forced. Line 4 large baking sheets with baking paper. Set aside.

In the bowl on an electric mixer fitted with the paddle attachment, beat the butter and sugar until just combined. Add the egg and cocoa powder and beat until well mixed. Sift the flours and baking soda together over the chocolate mixture and with the mixer on low, mix until just combined. Stir in the chocolate chunks.

Roll heaped tablespoons of the dough into balls, place on the prepared baking trays, allowing room for them to spread. Flatten slightly and arrange M&M top.

Bake 2 trays at a time for 10 minutes. Leave the cookies on trays for 15 minutes before transferring them to a wire rack to cool completely.

  1. It's a rainy overcast day here in Brisbane and perfect for baking! But sadly that will have to be relegated to the weekend. Some sort of candy bar creation may be involved....
