One of the up-sides of being a food blogger is that I get to eat granola at 3.30 in the afternoon when the light is best for shooting the photos. I do it purely for my art of course.
Peanut and Cacao Granola
4 cups rolled oats (not instant)
1/2 teaspoon fine sea salt
1/4 cup brown sugar
1/4 cup Peanut and Cacao Spread
1/4 cup dark agave nectar
1/3 cup flavourless vegetable oil (I used grapeseed)
2 teaspoons vanilla extract
1 cup almond, toasted and chopped
Preheat the oven to 180 C. Line a baking tray with baking paper and set aside.
Place the oats, salt and sugar in a large bowl and stir to combine.
In a separate bowl, stir the Peanut and Cacao Spread, agave nectar, oil and vanilla together until smooth. Pour this mixture into the oat mixture and stir until the oats are thoroughly coated.
Spoon the mixture onto the prepared baking tray and spread it out to an even layer.
Bake for 25- 30 minutes until the oats are golden and dry, stirring often.
Allow to cool on the tray. When cooled to room temperature, add the chopped almonds and store in an airtight jar.

Only for your art, of course :P Love it!! I don't have anymore of granola in my kitchen and I missed it. I have every ingredient apart from the spread but I could make something with my peanut butter and it will be perfect. It's on my list ''to do'' :)

ReplyDeleteSeriously delicious looking granola. Reminds me of the breakfast my Mum would make when I was younger: oats, drinking chocolate, sugar and milk - apparently it's a Danish thing. When one has the chance to have chocolate for breakfast one should most definitely seize it. The same goes for chocolatey peanutty granola at 3.30 in the afternoon!

Deleteoooh I just picked up some cacao nibs and can't wait to use them! I will have to come up with a recipe for my own peanut spread. Any ideas?

I love cacao nibs in granola. Just use your favourite peanut butter. It will taste great. Good luck... and yum!
