This is the sort of angelic, virtuous, halo-producing breakfast you eat when you have your whole day planned around a slice of yesterday's Chocolate Box Slice for afternoon tea.
Apple Pie Chia Porridge
slightly adapted from Wallflower Girl
3/4 cup almond milk
2 tablespoons white chia seeds
2 tablespoons almond butter
3 or 4 dates, pitted and chopped
1 tablespoon coconut sugar (optional, I find it sweet enough without)
1/4 teaspoon mixed spice
1/4 teaspoon ground cinnamon
1 apple, peeled and flesh chopped (leave a little of the flesh on the core for grating)
1 tablespoon chopped toasted pecans
Put all the ingredients except the chopped nuts into a blender and blitz until smooth.
Pour the mixture into a small saucepan and heat until warm.
Pour the porridge into a bowl, top with grated apple (from the core) and sprinkle with toasted, chopped pecans.
