Apple Pie Chia Porridge










This is the sort of angelic, virtuous, halo-producing breakfast you eat when you have your whole day planned around a slice of yesterday's Chocolate Box Slice for afternoon tea.



Apple Pie Chia Porridge
slightly adapted from Wallflower Girl
Serves 1

3/4 cup almond milk
2 tablespoons white chia seeds
2 tablespoons almond butter
3 or 4 dates, pitted and chopped
1 tablespoon coconut sugar (optional, I find it sweet enough without)
1/4 teaspoon mixed spice
1/4 teaspoon ground cinnamon
1 apple, peeled and flesh chopped (leave a little of the flesh on the core for grating)
1 tablespoon chopped toasted pecans

Put all the ingredients except the chopped nuts into a blender and blitz until smooth.

Pour the mixture into a small saucepan and heat until warm.

Pour the porridge into a bowl, top with grated apple (from the core) and sprinkle with toasted, chopped pecans.

  1. I never tasted chia seeds can you believe it? I'm going to the market soon, I'm going to buy some!!! And the apple pie in your recipe catch my eye :)

  4. I am certain that I just commented on this, but it's disappeared... Jen, are you messing with me?! Anyway, ahem... I love this recipe. Such a great idea to blend the chia seeds, I have a particular hatred of those gluey little buggers getting stuck in my teeth. The virtuous coconut sugar and almond butter sound divine... I feel nourished just looking at your photos! x

  5. Haha, I promise I'm not playing you Laura. Your comments are far to precious to me to delete or lose them. I don't know what happened, but as they say, you're here now and that's what counts. I'm not good with slimy either. Apparently, any food with a slimy or gluey texture is choc-full of soluble fibre and is a superfood - I think I read that somewhere... or may be I just made it up? Anyhoo, I don't like slimy (I don't even like the word slimy), so blitzing them to kingdom come is my way of fixing slimy... ew.

  6. I am wondering if it's possible to skip the almond butter altogether. I don't have another nut/seed butter on hand, but I've noticed that too many almonds are hard on my system. Could you just leave the "butter" part out altogether?

    1. Yes, you can defifintely leave the almond butter out of the recipe, it will still be delicious. Enjoy.
